This does not mean that the dairy Saint Nectaire is less deserving, but because the farm-made product is the convergence of two men's passions: one is the originator, the farmer, the other is the maturer whose task is to put all his experience into making this non-matured cheese the perfect cheese for consumers to enjoy.
