Where
does the milk come from ?
For the farm Saint Nectaire, the cow's milk has to come from a herd
on one farm situated in the AOC Saint Nectaire production area. For the
dairy Saint Nectaire, the only constraint is that the milk must be produced
in the label of guarantee zone. The milk comes from several farms and
is pasteurised

weight of a non-matured cheese is about 1.6 kg. 12 to 13 litres of milk
are needed to make a Saint Nectaire cheese.
